Luigi from Ammano farm in Tragliatella, Lazio, Italy showed me how it’s made the traditional way from a special breed of local black pigs he’s been perfecting for years.

    The curd resembles tofu. I can remember the first time I discovered large, lasagna slice size tofu, and this cheese with caviar on sour dough, and it needs a five ounce glass of Merlot or Chianti.

    Here in Brazil we haver a kind of sausage called "Linguiça Blumenau", named after the city of Blumenau in Santa Catarina. It was created by German immigrants and is pork-based, but also VERY soft. It is usually eaten spread on a piece of bread, like the one on the video.
